White sapote is a subtropical to warm temperate tree from Mexico and Central America producing large, smooth, green to yellow-skinned fruit with creamy white flesh and a flavour variously described as vanilla custard, peach, or banana. Tracked varieties include Macs Golden (a selected variety with consistent, high-quality fruit and golden-yellow skin at maturity) and various unnamed seedlings. White sapote is one of the more cold-tolerant tropical-origin fruits, handling light frosts once established. This makes it suitable for a wider range of Australian gardens than many tropical species, including sheltered positions in coastal NSW, SA, and WA. Trees prefer full sun in well-drained, fertile soil. They are drought-tolerant once established but produce better fruit with consistent irrigation during dry periods. Fertilise with a balanced fertiliser through the growing season. Trees grown from seed are highly variable in fruit quality and take 6-10 years to fruit; grafted trees from named varieties such as Macs Golden fruit within 3-5 years and produce reliably superior results. Fruit ripens from autumn to winter in most Australian regions. Handle carefully as ripe fruit bruises easily. In WA, white sapote grows well across the south-west and in Perth gardens. No quarantine restrictions apply. Fruit fly can affect ripe fruit; monitor and treat with approved bait or exclusion methods.
